Pancake cannelloni, flambéed apples and vanilla pudding

Ingredients pancakes :
- 125g of flour
- 4 eggs
- 400g of milk
- 100g of melted butter
- 1 pinch of sugar
- 1 pinch of salt
Ingredients vanilla pudding :
- 1 vanilla pod (or 1 scoop of vanilla sugar)
- 500g of full-cream milk
- 6 egg yolks
- 100g of sugar
- 20g of cornstarch
- 15g of flour
- 1 knob of butter
Ingredients apples :
- 2 Pink lady apples
- A splash of Rum Babs' Banana, Vanilla, Ginger, Cinnamon flavor.
- 1 pinch of brown sugar
- 1 pinch of cinnamon
Follow the recipe step by step below.
1 / Mix all ingredients with a hand mixer and let it rest.
2 / Remove the marrow from the vanilla pod
3 / Add to the milk and slowly bring the temperature op to its boiling point
4 / Beat the egg yolks with the sugar to white batter
5 / Add the cornstarch and flour
6 / Pour the milk onto this batter and then back into the pot
7 / Bring briefly back to a boil and add the butter
8 / Let it cool under plastic wrap in the refrigerator
9 / Cut the apples into brunoise and sauté briefly with a knob of butter, some brown sugar and a pinch of cinnamon in an anti-stick pan.
10 / Then pour a dash of Rum on top and ignite
11 / Fry the pancakes and roll them up with the vanilla cream and flambéed apples in the middle. 
Garnish if you wish with some freshly whipped cream.
